We seem to be entering the post-pop-up era. That’s not to say pop-ups are no more, rather they’ve become so ubiquitous that the concept has lost a great deal of its sting. In which case pop-ups need a twist, something to set them apart from the teeming throng.

This year Restaurante Cenador de Amós at the Urso Hotel and Spa in Madrid celebrated 20 years of Michelin stardom, and to mark the occasion they’re giving the restaurant a makeover, or rather six makeovers. For the next year, the best chefs from Galicia, Cantabria, Bilbao, Barcelona and Cantabria will bring pop-up versions of their own restaurants into Restaurante Cenador de Amós. The Table By… will see six chefs take residency for a month at a time, bringing their own menu and their own décor to compliment the food.

The hotel describe the event as ‘a pop-up table, a pop-up chef, a pop-up menu, a pop-up restaurant.' Evidently much more than your average 'pop-up.'

The concept is similar to that of STORY in New York, a space that has the point-of-view of a magazine, changing every four to eight weeks like a gallery, but selling things like a store.
