Last November we profiled KP Kofler, the founder of the nomadic restaurant, Pret a Diner. We're big fans of these pop-up dining experiences, with the 'Pret a Diner Minotaur' event, for example, hosting a feast of fine food and street art deep under the streets of London in the Old Vic Tunnels.

Now, Kofler & Kompanie, has just launched a permanent cafe in Mayfair. The new venture, 42°Raw Café, is a collaboration with Jesper Rydahl, the founder of 42° Raw in Copenhagen. The concept of the café is that all food and drink is 100% plant-based and served in its natural state – no additives, dairy products, sugar, colouring or preserving agents. If food is heated, its cooked only to 42°, guaranteed to maximize the goodness of the nutrients in the body. The team are committed to changing the way we think about food and drink, and as they say themselves, 'cooking is soo last year.'
